Cinnamon Roll Apple Pie Waffles Á La Mode

How about we celebrate today with some “Cinnamon Roll Apple Pie Waffles Á La Mode”! 𝙏𝙤𝙤 𝙈𝙪𝙘𝙝?  𝙉𝙖𝙬𝙬𝙬𝙬! These waffles were so good I thought I had died and gone to heaven , and can you believe that they're actually Low Carb/Keto Friendly? I bet you're saying “𝗡𝗢 𝗪𝗔𝗬!“ Apples aren't Low Carb!” Well, my friends, those delicious apples are actually Chayote Squash! 

I hadn't worked with chayote squash before this weekend, but I heard that they make a great apple substitute for low carb desserts. I wanted to find out for myself so I picked up a few and did a little experimentation. With the help of some spiced tea, gala apple flavoring, sweetener, and a few other ingredients, I had legit apple pie filling! I'll be sharing the full details on Thursday, you definitely won't want to miss it!

I made my waffles using @eatsweetlogic Apple Cinnamon Mug Muffin Mix. I simply made the mix according to the package directions, added half the batter to my mini waffle maker, topped with half my cinnamon roll mixture, swirled, cooked for 3 minutes, and repeat. After I made my waffles, I topped them with some cream cheese glaze, a bit of apple pie mixture, vanilla bean ice cream, and finished it with some yummy candied pecans! I'll be sharing how I make my candied pecans tomorrow, so be sure to check back for that yumminess!

Cinnamon Roll Swirl:

1 tbsp butter
1 tsp cinnamon
2 tsp brown sugar substitute

Place ingredients in a microwave-safe bowl, heat for 15 seconds, and mix.

Cream Cheese Glaze:

1 tablespoon butter
1 tablespoon cream cheese
1/4 tsp natural vanilla flavor
2 tsp powdered allulose

Place ingredients in a microwave-safe bowl, heat for 10-12 seconds, and mix until smooth.
