Keto Cheese Brownies

Using @eatsweetlogic Fudge Brownie Mix and my favorite cheesecake filling, I whipped together these super moist squares of deliciousness!

INGREDIENTS:

For the brownie layer

For the cheesecake layer

  • 8 ounces cream cheese softened
  • 1/4 cup Alulose
  • 1 egg
  • 1/4 teaspoon vanilla
INSTRUCTIONS:
  1. Preheat oven to 350 degrees
  2. Whisk 2 eggs into a large bowl with 1/2 cup water or milk.
  3. Add 8 tbsps melted butter or oil to the bowl 
  4. Stir brownie dry mix into a bowl
  5. For the cheesecake filling: Place the cream cheese and Allulose in a bowl. Beat with a mixer for 2-3 minutes or until smooth and creamy. Add the egg and vanilla extract, then beat until smooth.
  6. Pour the cheesecake mixture over the brownie batter to a greased 8x8 pan.
  7. Add 1 tablespoon of very hot water to the reserved brownie batter. Stir until smooth.
  8. Dollop the brownie batter over the cheesecake. Use a skewer or knife to swirl the two batters together.
  9. Bake for 30-35 minutes or until a toothpick inserted into the center of the brownies comes out clean or with just a few crumbs attached.
  10. Cool the brownies completely.
  11. Use the parchment overhang to lift the brownies out of the pan. Cut into squares, then serve.
