Lemon Poppyseed Cake with Raspberries

Lemon and poppyseed is a match made in heaven and here I have a delicious lemon poppyseed keto cake thanks to a baking mix by @eatsweetlogic. The mixture is made using almond flour, coconut flour, crystallized lemon, and poppyseeds to which I’ve simply added eggs and butter. I’ve also folded in a handful of raspberries too for extra tartness which compliments the lemon beautifully!

Shares with family today the lemon taste here is incredible and I love how soft the sponge is!
