Lemon Poppyseed Cupcake

You guys this is definitely my new favorite flavor of the sweet logic mug cake mixes! Every flavor I’ve tried has been great and I love that they are clean, gluten-free, don’t taste like funky sweeteners or gritty almond flour and are so fast and easy to make! Perfect for when you want a sweet treat but also don’t want to spend an hour in the kitchen!

I followed the package directions of Sweet Logic Lemon Poppyseed Mug Cake Mix and added the packet to one egg and 1 tablespoon melted butter. Instead of cooking it in a mug I divided it between two silicone muffin liners and microwaved for 50 seconds until they were set.

While they cooled I whipped up a quick lemon poppyseed buttercream frosting by combining a couple tablespoons of softened butter with a few spoons of Monk fruit that I powdered in a coffee grinder, a splash of fresh squeezed lemon juice, a couple drops of yellow food coloring and little more poppy seeds, then just whisked up until it was nice and smooth and topped the cupcakes with it!
