Microwave Carrot Cake Donuts with Cream Cheese Frosting

OK guys… I’m obsessed with these mug cakes! They’re so easy to work with, and they are SO good if you’re looking for a quick one minute keto dessert!

So even though the instructions on the back of the packets will make a delicious, fast mug cake, you guys know that I’m a little extra so I wanted to jazz things up a bit and make some microwave carrot cake donuts (in the silicone donut mold I ordered from Amazon) with cream cheese frosting! They were so easy and so yummy (moist, the perfect amount of carrot cake spice flavor and no artificial sweetener aftertaste), even my daughter approved and said they didn’t taste keto!

For the donuts, I combined:

1 egg
1 Tbsp melted butter
1 Packet Sweet Logic Carrot Cake Mug Cake Mix
2 Tbsp grated carrot (optional)
1 Tbsp unsweetened shredded coconut (optional)
1 Tbsp chopped walnuts (optional)

Mix well and pour into a silicone donut mold, I got mine from Amazon and the mix filled up two donut slots. I sprayed a little avocado oil on the molds first but I’m sure that wasn’t necessary (since it is silicone and all)…I’ve just had some traumatic experiences in my past from baked goods sticking so I always spray everything.

Microwave 1 minute 15 seconds, remove from microwave and allow to cool for a few minutes before popping out of the molds.

For the cream cheese frosting I mixed together:

2 oz softened block cream cheese 
2 Tbsp softened butter
1/4 tsp vanilla
2 Tbsp powdered sweetener (I like to powder my own monkfruit in a coffee grinder because I think it taste better than swerve, I hate how swerve has a cooling sensation)

Use a small whisk to whisk everything up until it’s smooth, then it’s ready to gently spread on top of your donuts with the back of a spoon, garnish with more unsweetened coconut and walnuts, if desired.
