Happy National Carrot Cake Day!!!!! Thanks to my friends @eatsweetlogic I get to join in the fun and CELEBRATE! Not only was this little mug cake (yes, it's a mug cake!) delicious, but it only takes a few minutes to make!
I simply made the “Ultimate Carrot” mug cake by @eatsweetlogic according to package directions. I allowed the cake to cool, removed it from my mug, and cut it into three layers.
While my cake was cooling I made some simple single-serving frosting. For transparency purposes, my cake pictured has a double batch of frosting. 😉
How I made my frosting...
1 teaspoon cream cheese (softened)
1 teaspoon butter (softened)
A few drops of vanilla
2 tablespoons of powdered sweetener
*unsweetened almond milk for thinning, only if needed.
Mix everything except almond milk, in a small bowl and mix well with a fork. If the frosting is too thick for your liking, add a teaspoon of the almond milk. Add more almond milk a very little bit at a time until desired consistency is achieved.
