Cake pops I made these delicious carrot cake cake pops using @eatsweetlogic Keto Carrot Cake Mix.
INSTRUCTIONS:
Make the carrot cake mix according to the instructions.
Let cool while you make your frosting
Frosting Recipe:
+ 7 tbsp vegan butter (I used crisco)
+ 1 3/4 cup powdered sugar
+ 1 tsp vanilla
+ 2-3 tsp coconut milk
Crumble the cooled cake into the frosting and mix in a mixer. Roll into balls and freeze for one hour
Icing Recipe
+ powdered sugar
+ coconut milk
(I did not measure but add your powdered sugar to a cup and add 1 tbsp of coconut milk at a time until you get a smooth consistency)
+ using a stick, dunk your cake balls into the icing and cover with sprinkles
+ store in the fridge
